A comforting twist on street food, starring chicken and chickpeas.



Sometimes, you just crave something hearty, warm, and gently spiced — without spending hours in the kitchen. These Soul Wraps are the perfect answer. They combine the best of comfort food and street food: juicy chicken, flavorful chickpeas, and a creamy sauce, all wrapped in a soft tortilla. Ideal for a cozy dinner with friends or a weekday meal that feels just a little more special.

Ingredients


6–8 small whole wheat tortillas

400 g (14 oz) chicken breast

400 g (14 oz) chickpeas, drained and rinsed

1 onion

2 cloves garlic

1 tsp each of paprika, cumin, and chili powder

1 tbsp tomato paste

45 ml coconut milk

100 ml water

1 vegetable stock cube

2 tbsp extra virgin olive oil

2 tsp honey

A splash of white wine vinegar (to taste)

Salt and pepper (to taste)

90 g (3 oz) arugula and field greens (optional)

50 g (1.75 oz) plain whole milk yogurt

10 g (⅓ oz) fresh mint



Instructions


  1. Cut the chicken into bite-sized strips or cubes. Finely chop the onion and garlic. Rinse and drain the chickpeas.

  2. In a small bowl, mix the yogurt with half of the mint, a splash of olive oil, salt, and pepper. Set aside as a dipping sauce.

  3. In a large skillet, heat 2 tbsp of plant-based butter and 2 tbsp of olive oil over medium heat. Sauté the onion and garlic for 3–5 minutes until soft and fragrant. Add the spice mix, tomato paste, and chickpeas. Stir and cook for 1–2 minutes.

  4. Add the chicken to the skillet and cook until golden and fully cooked through, about 6–8 minutes. Season with salt and pepper.

  5. Pour in the coconut milk and 100 ml of water. Crumble in the stock cube and stir well. Let simmer for 4–6 minutes. For a creamier texture, lightly mash some of the chickpeas with the back of a spoon. Add honey and a splash of white wine vinegar. Taste and adjust seasoning if needed.

  6. Warm the tortillas briefly in a dry skillet or oven until soft and pliable.

  7. Fill each tortilla with the chicken-chickpea mixture. Top with greens, the remaining mint, and (optionally) a sprinkle of gomasio or toasted sesame seeds. Serve with the yogurt sauce on the side.
